If you're a dedicated bacon lover, there's now a Vancouver takeout window to go absolutely hog wild for.

Edible Canada opened its Granville Island to-go eatery Friday with an all bacon theme: A coast-to-coast "Tribute to Bacon."

The menu features regionally inspired bacon-themed dishes, including old classics like Cobb salad and a BLLT (add bacon aioli and butter lettuce for good measure).

But there are also some new favourites, including a crispy fish and bacon taco, which includes Ontario pickerel and an apple radish slaw, and a "Box O' Bacon," featuring pepper candied bacon with rye chocolate ganache dipping sauce.

Chef Eric said he came up with the concept for an all-bacon restaurant because of his "personal love of bacon."

"No one is doing this in Canada. It's something that's new and unique here," he said. "This builds on our mantra of building on the best of what's going on in Canadian cuisine."

For the sweet tooth, there are three bacon-infused desserts: a bacon cinnamon sticky bun, bacon chocolate gelato and "To Die For" bacon banana bread, with whipped maple butter.

Erin Ireland of "To Die For" calls bacon the "ultimate ingredient" to put into desserts.

"It goes with anything. With the bacon banana bread, the bread itself is sweet and salty and the bacon just amplifies that in a major way," she said.

Additional items will be added throughout the summer. The window is open from 11 a.m. to 7 p.m. daily at Edible Canada on Granville Island.
